  1. 🥃It’s day 2 of -20° weather 🥶 and I’m dreaming of a tropical vacation. What better time to talk about rum finished whisky? 🌺 🏝Rum casks are often whiskey casks first. Usually charred barrels that previously held bourbon or Tennessee whiskey are sent to rum producers in the Caribbean. In warmer climates, spirits mature faster, and barrels maturing rum can be used repeatedly. Eventually the barrels do lose their oak flavor, so whisky makers need to be careful choosing their rum casks, or create their own rum maturation facility like Glenfiddich. Not all rum is created equal, but typically a rum cask will fuse whisky with tropical fruit, coconut, and caramel flavors.   2. 🥃One word today: Peat. 🗣Lingo: “Peat freaks” are people that think smokier is better. “Peat Monsters” are whiskies that have high peat PPM. For the novice: Peat = smoky flavor. Phenols give peat its smoky flavor and can be measured in the malt (barley). However, not all of the phenols end up in the final spirit, so the PPM just gives you an idea of how smokey a dram MIGHT be. I really found this to be an incredible sherry bomb, whether or not it was worth the money is another question. It is priced quite high, but then you are also getting it at cask strength. It’s comparable to the 23 year old triple sherry; however, it’s not quite as good as that, but then the triple sherry also retails at over £100 more than the 21, so you should expect it to be better. With where the whisky sits at RRP it’s honestly a great whisky from Tamdhu. It doesn’t quite punch up to the 18 year old but I would certainly say it gives the 15 year old a good run for its money and would my preference over the two. Take a look at the magnificent colour of it, you know that’s a real sherry bomb! Paired with a cigar those sweet sherry flavours really pop out all the more!   1. 🥃 Russell’s Reserve—Kentucky Straight Bourbon Whiskey, Aged 15 Years, 2024 Release, 58.6% ABV 🇺🇸 My local @specs1962 periodically calls to tell me they have a bottle on hold for me. I always say I’ll be right there because I want those infrequent calls to continue. I never ask the cost because they always sell the bottles at normal retail—awesome folks. I went to the cash register, they rang up the bottle, and I gulped at the cost. I remembered @dallasbourbonclub said this was a contender for whiskey of the year. Let’s ignore the gulps. . AROMA: Strong and luscious. Cherries soaked in Cognac. Fresh whole figs. Oak smoked apples just shy of applesauce. Thick and rich molasses and brown sugar caramels. On the down low, artisan chocolate and the fresh-ground, fruit-forward, artisan coffee beans from @oacoffeeroasters (their roasts have redefined my take on coffee). A touch of cinnamon sticks. A shard of oak. . PALATE: Spicy and demanding. Cognac soaked cherries now wrapped in tobacco leaves. Raw, unfiltered honey oozed onto the caramels. Plenty of black pepper mixed with wonderful cloves. Simply subtle vanilla. Oak as a player rather than a dominator—this is no Diddy party. . FINISH: Soulful and fulfilling. Started with a rush of manageable oak minus obstructing tannins. Black pepper and capsaicin spices punched afterwards with a bit of cloves and cinnamon sticks. Faded to calmly spiced cherry cola. . CONCLUSION: Put aside the noise. It’s all happening in this dense bourbon with so much to discern. A quick review here and a quick review there is an injustice. This bourbon demands attention. Spend the time and be rewarded. That said, if you’re looking for smooth, stay away. . YUM-TO-COST: Definitely dense with yum, but its cost pushed to the levels that require an all encompassing yum—just not there. This is a yum-to-cost loser yet I’m quite happy being a loser. Would I buy again, gulp? Well, I’ll save that decision until @specs1962 may call again. .   2. 🥃 Holladay—Missouri Straight Bourbon Whiskey, Rickhouse Proof, Distilled Fall 2016, Bottled August 2023, Aged 6 Years, 60.05% ABV 🇺🇸 Holladay asked if they could send me some bourbons, and I replied can I pick them up in person? They were most excellent hosts for my family entourage. We had complimentary cocktails and mocktails followed by a fabulous tour of a genuinely historic distillery that dated back to 1856. We finished with Apple Pay getting us more cocktails and mocktails, whiskey ball caps for the boys, and this third bottle of whiskey. And, since you’re here for the whiskey, let’s get to it! . AROMA: Solid. Bags of chewy brown sugar vanilla caramels. Cherry cobbler drizzled with honey. Faint baking spices. Ever present damp oak with the rickhouse so close to the Missouri river. Deja vu to the BIB (my previous post) albeit with more intensity. . PALATE: Invigorated. More cherries. Honey, burnt toffee and rock candy. Lively baking spices plus a splash of anise. An edge of bitters and standout oak. . FINISH: Persisted. Upfront baking spices, anise, and eucalyptus. Ended with standout oak and persistent spices that rule over rock-candy sweetness. . CONCLUSION: Solid and impressive for a distillery first barreling in 2016 and bottling at aged 6 years. It ticked my bourbon boxes. The aroma was quite reminiscent of the BIB, but from palate to finish this release was its own creation. Rickhouse floor matters as the BIB was mainly from Floor 5 while this release was mainly from Floor 3. Others in my family preferred the take-it-easy attitude of the BIB, but there is much enjoyment with the stand-and-deliver brashness of this release. . YUM-TO-COST: Definite winner winner so bring on more chicken dinner. More, more, more. Do we have time for so many new craft distillers bringing us new bourbons?   3. 🥃 Edradour—Aged 12 Years, Highland Single Malt Scotch Whisky, Oloroso Cask Matured, Distilled 11 December 2008, Bottled 18 May 2020, Cask No. 386, Specially Selected for @specs1962, Cask Strength 57.1% ABV 🏴󠁧󠁢󠁳󠁣󠁴󠁿 Such an affirming yum-to-cost winner. Affirming from the moment I popped the bottle for the shot. Affirming from the first savor of the dram from the shot. Affirming that this distillery is indeed the “Little Gem” of Scotland. . AROMA: Raisins and sultanas. Stewed plums. Dark chocolate and almonds. . PALATE: Thick and chewy raisin and sultana pie. Plentiful baking spices. Tobacco and leather. A hint of oak. Oloroso cask matured, not finished, created flavors so dense. . FINISH: Spiced dark chocolate. That pie lasted and interestingly faded to heavy black peppered pie crust (like when someone eats the fruit from the pie and leaves the crust but who peppered the crust?) Ended with a dark chocolate bar bearing scattered raisin niblets. The sensation changed deliciously in time so not one to dram too quickly, but rather let the spices fade. . CONCLUSION: This is an affirming yum-to-cost winner. All my little gems have been single cask picks, and every cask has been a winner-winner chicken dinner (an expression I learned after moving to Texas). .
